Mini Phyllo Tacos

So easy and very yummy!
These would be good for an appetizer but I served them along the tortilla soup.

1lb. ground beef
1/2 cup finely diced onion
1 envelope taco seasoning
3/4 cup water
1 1/4 cups shredded Mexican cheese
2 packages frozen mini phyllo tart shells (I saw these both in the freezer section and in the baking aisle)

Cook beef and onion over medium heat until no longer pink.  Drain.  Stir in taco seasoning and water.  Bring to a boil, reduce heat and simmer 5 minutes.  Remove from heat and stir in 1/2 of the cheese. 

Place tart shells on an un-greased cookie sheet.  Fill shells with taco mixture.

Bake at 350 for 6 minutes.  Top with remaining cheese and bake 2-3 minutes more or until cheese is melted.

Serve with taco fixins!

Julie and Julia Cooking

Did any of you ever see Julie and Julia?
I loved that movie.
I got this idea from Julie in the movie.
She decided to cook her way through Julia Child's cookbook (The Art of French Cooking, or something like that).
Well, I am cooking my way through this lovely cooking magazine called GROUND BEEF.
It's got over 100 recipes that use ground beef (something we have pounds and pounds of in the deep freeze and I can only handle hamburgers and tacos only so much).
I'm excited to cook my way through!


My first recipe to try was Cream Cheese and Swiss Lasagna.

Pinterest Recipe: Creamy Chicken & Wild Rice Soup




Recipe: Creamy Chicken & Wild Rice Soup

ingredients

  • 2-3 Tablespoons Olive Oil
  • 2 cloves garlic
  • 1/2 cup carrots
  • 1/2 celery
  • 4 cups chicken broth
  • 2 cups water
  • 2 cooked, boneless chicken breast halves, shredded
  • 1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3/4 cup all-purpose flour
  • 1/2 cup butter
  • 2 cups heavy cream

instructions

  1. Cook chicken breast – I cooked mine in a skillet with a little bit of olive oil until cooked thru (about 4-5 mins on each side), removed from pan and shredded with a knife and fork. **You could also use a rotisserie chicken, just pull chicken from bone. Set cooked chicken aside.
  2. In a large pot over medium heat saute garlic cloves in olive oil, then add carrot and celery and saute for a few minutes until softened.
  3. Add broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
  4. In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture with a wooden spoon by tablespoons, until thick, to form a roux. Whisk in cream, a little at a time, until fully mixed and smooth. Cook until thickened about 5 minutes.
  5. Add cream mixture into broth and rice, stir slowly. Cook over medium heat until heated through, about 10 to 15 minutes.
Number of servings (yield): 8

The recipe claimed to be just like Panera (St. Louis Bread Co.) and it was!  Sooooo good!  I made whole wheat bread to go along with it!

Pinterest Recipe: Enchilada Lasagna





Enchilada Lasagna

Ingridients:

2 tbsp of vegetable oil
1 lbs chicken breast, chopped to bite pieces
5 cups of mexican blend cheese
1 can of cream of celery
1 can of cream of chicken
1 1/2 cups sour cream
1/4 cup canned and chopped green chillies (drained)
small corn tortillas
1 tsp cumin
2 tsp salt
1/2 tsp pepper


So, this was my 2nd Pinterest recipe and it did not disappoint!  It was so yummy!  Embarrassingly, we polished off the entire 9x13 in two days.

Pinterest Recipe: Awesome Baked Pork Chops

  • My first Pinterest recipe.  I am an addict and am looking for a new name for Pinterest (like Crackbook for Facebook).  
The recipe was easy but a bit time consuming.  Everyone in my house liked it though and I'll definitely make it again!.

Directions:

    Preheat oven to 350.
  2. 2
    Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste.

    Place the beaten eggs in a small bowl.
  4. 4
    Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
  5. 5
    Heat the oil in a medium skillet over medium-high heat.
  6. 6
    Fry the pork chops 5 minutes per side, or until the breading appears well browned.

    Transfer the chops to a 9 x 13 baking dish, and cover with foil.

    Bake in the preheated oven for 1 hour.

    While baking, combine the cream of mushroom soup, milk and white wine in a medium bowl.

    After the pork chops have baked for an hour, cover them with the soup mixture.

    Replace foil, and bake for another 30 min.

Pinterest

I am making a new goal for myself.  Occasionally, I find that I tend to make the same meals each week.  It may have something to do with the fact that we have about 1200 pounds of red meat in the deep freeze and I need to come up with ways to use that up before going to store and buying other types of meat.  Well, I'm putting my foot down!  One night a week we are going to have something OTHER than red meat.  We will have chicken, shrimp or salmon.  Here is where my goal comes into play:  I am going to find one meal on Pinterest a week to fix for my family.  I will blog about it.  I will photograph it.  I think it will be fun!  And it will force me to stop neglecting KOHLEREATS!

NYE food

Well, this is posting later than planned.  I'd originally planned to post about what I was making for New Year's Eve and then got side-tracked with all the prepping and getting the house picked up and totally forgot to take pics and everything.

Hahaha, all I really even made was P-dub jalapeƱo poppers.

The rest of it was easy stuff (mac and cheese, veggies and dip, Papa Murphy's pizzas).

Oh yes, and I also made a cocktail called Goombay Smash.  It had  1 bottle of rum,  1 bottle of coconut rum,   1 large can of pineapple juice and 30 oz. sweet and sour mix in it.  Very very tasty!

But during the course of the night I was introduced to a new drink called Rum Chata.  It tastes like the milk left over from Cinnamon Toast Crunch cereal.  I could honestly drink it morning, noon and night.  Thankfully, I'm not a mom who drinks very often.

We hosted 11 adults and 16 kids.  Everyone was gone by 10:15, house picked up and kids in bed by 11:00.  Great New Year's Eve!
