I found a very close recipe for the white cheese dip that our local Mexican restaurant serves.
I made it and served it not only with chips but over some chicken breasts that had been marinated in some Lowry's chipotle marinade and then grilled.
Super Yum!
Queso Blanco Dip
Yield: about 2 cups
INGREDIENTS
- 1 tbsp. canola or vegetable oil
- ¼ cup onion, finely chopped
- 1 jalapeƱo pepper, seeded and finely chopped
- 12 oz. white American cheese, shredded* *White American cheese can be found at the deli counter in most grocery stores.
- 4 oz. Monterey jack cheese, shredded
- ¼-2/3 cup milk
- 1 tomato, seeded and finely diced
- 2 tbsp. cilantro, minced
